Breakfast was a Flax/Wheat-free/Gluten Free waffle with some Justin's squeezable Almond/Maple Butter with nanner. I also had English Breakfast tea--made per usual with a bit of half/half and raw sugar.
Lunch was two homemade chicken tacos, made with baked chicken tenders (seasoned with cilantro salsa), a corn/black bean mixture, avocado, over two corn tortillas, seared in a pan with some Pam spray. Delish!
Dinner was baked mustard/honey chicken thigh (skin removed) cauliflower surprise (thank you South Beach diet cookbook), and some yellow squash steamed, then mixed with some spaghetti sauce.
